The pasta is naturally colored using purple sweet potato powder and a touch of lemon juice, giving it a soft pink hue that makes it as beautiful as it is delicious. The sauce is made by sautéing garlic, onions, mushrooms, and crispy bacon in butter before being enriched with a smooth milk-based roux. The result is a perfectly balanced dish—savory, creamy, and subtly sweet, with the pasta absorbing all the luscious flavors of the sauce. Garnished with Parmesan cheese and Italian herbs, this pasta is both an elegant and comforting meal, ideal for a romantic dinner or a special gathering.

Ingredients

  • Spaghetti: 150g

  • A+ Pure Ube Powder: 4 tbsp

  • Lemon Juice: 5ml

  • Water: 1500ml

  • Butter: 20g

  • Garlic Cloves: 2 (minced)

  • Onion: ½ (finely chopped)

  • Mushrooms: 100g (sliced)

  • Bacon: 50g (sliced)

  • All-Purpose Flour: 20g

  • Milk: 300ml

  • Sea Salt: To taste

  • Black Pepper: To taste

  • Parmesan Cheese: Desired amount (for garnish)

    Italian Herbs: For garnish


Directions

  1. Cook the Pink Pasta:

    In a large pot, bring 1500ml of water to a boil. Add 4 tbsp of purple sweet potato powder and 5ml of lemon juice, stirring until the water turns pink. Add the spaghetti and cook for about 12 minutes until soft and evenly colored. Drain and set aside.

  2. Prepare the Sauce:

    In a non-stick pan, melt 20g of butter, then sauté minced garlic for a few seconds. Add chopped onions and cook until soft. Stir in mushroom slices and bacon, sautéing until fragrant.

  3. Make the Cream Sauce:

    In a separate bowl, mix 20g of all-purpose flour with 300ml of milk until smooth. Pour this mixture into the pan and stir continuously until the sauce thickens. Add the cooked pink pasta, mix well, and season with sea salt and black pepper.

  4. Plate and Garnish:

    Transfer to a serving plate and sprinkle generously with Parmesan cheese and Italian herbs. Serve warm and enjoy!
