The floral sweetness of sakura syrup is transformed into soft agar jelly, which adds a delightful chewiness to every sip. Combined with fizzy soda water and topped with a luscious scoop of homemade sakura ice cream, this drink is both refreshing and indulgent. The layers of flavors and textures make it a perfect springtime treat, while a sprinkle of freeze-dried strawberry powder enhances its floral and fruity notes. Light, fragrant, and creamy, this sakura soda is an elegant twist on a classic float-style beverage.

Ingredients

Sakura agar jelly:

Sakura syrup : Kanten powder = 1:20

Sakura ice cream:

Sakura Soda:

  • Soda water

  • Ice cubes

  • Optional toppings - such as maraschino cherries

  • Optioal: Freeze-dried strawberry powder

Directions

Making Sakura Agar Jelly:

  1. Pour Sakura syrup into boiling hot water.

  2. Add 15g of kanten powder and whisk until completely dissolved.

  3. Refrigerate the cooled mixture for about 4 hours until it sets into jelly.

  4. Once set, cut the Sakura jelly into small cubes.

Making Sakura Ice Cream:

  1. Prepare a large bowl and pour in 1 part Sakura syrup, 2 parts whipping cream, and 5 parts milk, Mix well.

  2. Following your ice cream machine's instructions, churn the mixture into ice cream.

Assembling Sakura Cream Soda:

  1. Add the Sakura jelly cubes and some ice cubes to a cup.

  2. Add any toppings of your choice.

  3. Pour in soda water until the glass is almost full.

  4. Top it off with a scoop of homemade Sakura ice cream.

    Optional: Sprinkle some freeze-dried strawberry powder on top of the ice cream for an extra burst of flavor.
