Ingredients

Soufflé Pancakes

  • Cake Flour: 20g

  • Baking Powder: 0.4g

  • Egg Yolks: 45g (approx. 2 yolks)

  • Milk: 20g

  • Egg Whites: 125g (approx. 4 whites)

  • Granulated Sugar: 15g (added in two parts)

Strawberry Cream

  • Strawberry Powder: 5g

  • Cheese Sea Salt Cream Powder: 22.5g

  • Ice Water: 80ml

Decoration

  • Fresh Strawberries: As needed (for making strawberry snowmen)

Directions

  1. Sift Dry Ingredients:
    Sift cake flour and baking powder together.

  2. Prepare Egg Yolk Batter:
    Mix egg yolks and milk in a bowl until smooth, then add the sifted dry ingredients and mix until no lumps remain.

  3. Whip Egg Whites:
    Beat egg whites in a clean, grease-free bowl. Gradually add sugar in two parts and whip until soft peaks form (firm peaks with a slight curve).

  4. Combine Batter:
    Add one scoop of whipped egg whites to the egg yolk batter, mixing gently. Pour the egg yolk mixture into the remaining egg whites and fold gently with a spatula.

  5. Cook Soufflé:
    Place the batter in a piping bag. Heat a pan and pipe the batter onto the pan. Cover with a lid and cook for 3-5 minutes per side until fully cooked.

  6. Prepare Strawberry Cream:
    Beat strawberry powder, cheese sea salt cream powder, and ice water until smooth and creamy.

  7. Assemble and Decorate:
    Plate the soufflé pancakes, drizzle with strawberry cream, and decorate with strawberry snowmen. Serve immediately.
